Coffee farmers from Flores use exclusively organic compost to fertilise their coffee trees. After being handpicked, the ripe cherries are immediately processed according to the traditional wet-hulled method: after pulping, the beans are washed and fermented for a few hours before being sun-dried to 35% moisture, hulled and laid again on drying patios until they reach a 11-13% moisture rate.
